Spaghetti meatballs

I made spaghetti meatballs for dinner tonight. With grana padana (parmesan) cheese shaved over the top and surprisingly tasty whole wheat pasta. Yum!


The recipe is adapted from one of our current favourite tv chefs: Michael Smith aka Chef At Home

* Mince meat
* 1/2 large onion (diced finely)
* 1 clove garlic (diced finely)
* Handful of stale (or normal) bread (or breadcrumbs), soaked in milk (just enough to moisten all the bread)
* 1 egg yolk
* Salt and pepper

1. Mix all ingredients together and shape into balls.
2. Heat a pan with olive oil
3. Fry meatballs in batches of about 5 til brown. Take out of the pan and set aside. Repeat until all meatballs are fried.


* 1/2 large onion (diced finely)
* 4 cloves garlic (diced finely)
* Zest of a 1/4 lemon
* 3/4 tall bottle of tomato passata
* 1 tomato, diced
* Lemon juice to taste (start with juice of 1/4 lemon)
* Salt and pepper
* Sugar to taste
* 2 tsps basil pesto (or to taste)
* Parmesan cheese

1. Heat olive oil in a pan
2. Fry onion on medium heat until translucent
3. Add in the garlic and lemon zest and fry until aromatic
4. Add in tomato and cook off until tomato is soft
5. Add passata and pesto
6. Season with salt, pepper, lemon juice and sugar
7. Add in meatballs.
8. Simmer and reduce a little bit.
9. Serve with pasta and parmesan cheese.
